I've had requests for the recipe to one of my very favorite dishes - it's a delicacy from the Bluegrass State, using the leftover holdiay turkey. Mind you, no one there waits for the holdiays to make one of these... and I love them, although eating turkey does make me a cannibal, I guess.
The Kentucky Hot Brown (serves 2)
4 pieces of light/medium done toast
Sliced deli or leftover turkey (enough for 2 sandwiches worth as you see fit)
4 slices of bacon (precooked but not burnt)
4 slices of tomato (fresh and crisp as you can get)
Paprika, Salt, Pepper
Shredded cheddar cheese (2 cups more or less)
Heavy cream (a cup more or less)
3 tablespoons of butter
2 tsp of flour
In a saucepan over medium heat (be easy) melt the butter and whisk in flour to form a roux (not a Genghis, we already have one). Add cream and cheddar gradually, and mind the consistency. The idea here is to form a medium-thick, cheesy sauce, rather than a heavy layer of pure cheddar. Heat until melty and well blended and set aside.
In an oven safe dish, overlap 2 pieces of toast for the base of each hot brown, and stack turkey on. Add a dash of paprika, salt and pepper. Add tomato slices. Ladle on your cheddar sauce over each hot brown, and top with 2 crossed strips of bacon.
Fire up your oven broiler or toaster oven, and pop those suckers in until the bacon is crispy and sizzling, and the cheese topping is a nice bubbly golden brown.
Go crazy.
Repeat until bloated.
